Angela Hartnett with Waitrose Traditional Panettone 750g (£25.00)
A celebration of family and flavour, this Panettone Classico is made with Calabrian citrus and Italian wildflower honey to a recipe from Maria and Giuliano Filippi. Their story began back in 1972, when Maria and Giuliano started exploring methods of natural leavening within their baking. Today, the torch is carried by their sons – who use the same mother dough (now half a century old) to create these small batch panettone.
Quality and authenticity are essential when creating the Panettone Classico. Oranges ripened under the Southern Italian sun are sorted by hand in Calabria and candied in specially designed vessels for up to six days, to create a zingy, vibrant flavour. The raisins are soaked in white wine from Breganze (Vicenza) to add depth and complexity, while the dough is sweetened with wildflower honey from a neighbouring region.
This small batch approach allows for precision – more even blending, consistent flavour and better control over texture. While machines are used in the production process, every piece of equipment has been personally designed by Andrea Filippi. As a result, many of their machines are completely unique and exclusive to the Filippi family.
Angela Hartnett with Waitrose Amaretti Morbidi Alla Mandorla 250g (£7.50)
Rich with the aroma of almonds, these Amaretti Mobidi Alla Mandorla are a true labour of love. Each one is formed by hand near the city of Siena by expert bakers at La Fabbrica del Panforte. They are then gently baked for a delicate crust and a soft, light centre. Revered since medieval times, this combination of aromatic almonds and sugar is a treat that’s been passed down through the generations – a true taste of Italian tradition. Enjoy with an espresso and transport yourself to the heart of Tuscany.
Angela Hartnett with Waitrose Brutti Ma Buoni 200g (£6.50)
Created near the city of Siena by artisan bakers at La Fabbrica del Panforte, these biscuits are made with gently roasted Italian hazelnuts and a light-as-air meringue. After gentle baking, the result is a delicate crust with a crunchy centre. Literally meaning "ugly but good", these biscuits are a time-honoured favourite, loved by generations of Italians. Serve alongside freshly brewed coffee.
Angela Hartnett with Waitrose Almond Cantuccioni Biscuits 240g (£6.50)
Crafted by the artisan bakers of Masini - one of the first biscuit producers in Tuscany, founded in 1929 and still family owned to this day. These crisp biscuits are slow baked and bursting with almonds. Enjoyed by generations of Italians, crunchy Cantuccioni pair perfectly with a drink for dipping - be that a morning coffee or a sweet Italian dessert wine.
Angela Hartnett with Waitrose All Butter Parmigiano Reggiano Biscuits 80g (£3.50)
These rich, crumbly all butter biscuits are made in small batches with a multi-stage proving process. Generously prepared with 25% Parmigiano Reggiano (aged for a minimum of 12 months for real depth of flavour) they’re baked by a second-generation, family-run artisan bakery that has been mastering its craft since the 1950s. Delicious as an aperitivo with a dry prosecco or Franciacorta to cut through their buttery richness.
